We carved ours a week ago and then found out that was a mistake. The dry Colorado climate shrivels carved pumkins in 2 days. Over the weekend we soaked them in water and they re-hydrated, but 2 days later they were shrivelled again. Next year we'll have to remember to carve no earlier than October 30.
Here we have the opposite problem: wet Vancouver means if you carve too early, your pumpkins rot. So the day before is a good choice no matter where you are.
